Blackberry Buckle

2 cups flour
2 1/2 tsp baking powder
1/4 tsp salt
1/2 cup butter (softened)
3/4 cup sugar
1 egg
1/2 tsp vanilla
1/2 cup milk
2 cups fresh or frozen blackberries
1/2 cup flour
1/2 cup sugar
1/4 cup cold butter

Combine flour, baking powder and salt. In a separate bowl, beat butter. Cream in sugar. Add egg and vanilla and beat well. Add dry mixture and milk alternately, beating until smooth after each addition.

Preheat the oven to 350. Grease an 8x8 or 9x9 pan. Spoon batter into prepared pan (it'll be thick).

In a small bowl, beat cold butter for about 30 seconds. (Either wash your beaters or switch them out if you're fortunate to have an extra pair.) Add sugar and beat until crumby. Stir in flour. Voila! Easy crumb topping!

Sprinkle blackberries over batter in pan, then sprinkle crumb topping over them. Bake for 50-60 minutes. Serve warm.
