Vegetable soup

This warm, flavorful soup is a hit with kids, super easy and very inexpensive to make.

1 20 oz can of tomato sauce
8 oz dried pasta, any shape
8-10 carrots, peeled and diced
2 large potatoes, peeled and diced
1-2 cups frozen veggies (think peas, green beans, corn, squash)
2 tsp. salt
1 tsp. pepper
2 Tblsp. chicken bouillon (beef will work in a pinch)

Fill a stock pot half full with water. Add the tomato sauce and bring to a boil. Meanwhile, chop vegetables. When the water is boiling, add vegetables and pasta. Return to a boil and simmer 20 minutes. Season to taste. Serve with warm, hearty bread, or in a bread bowl!

Tips:

If you don't have tomato sauce, you can use 10 oz of tomato paste and 10 oz water, canned, stewed tomatoes, or even spaghetti sauce.

Be creative! Use whatever vegetables you have on hand.

For extra 'heartiness' add a can of beans.. think navy, white, pinto or kidney. Or, add lentils or barley.
